In an attempt to enhance my health, I'm trying to eat avacado. Trying, meaning that I love guacamole but straight avacado just doesn't taste good to me...yet. I'm sure it can be an acquired taste like asparagus was to me
So...I made avacado butter to put on my baked sweet potato last night. It was delish!
Avacado Butter
1/2 stick unsalted butter (but I used Kerry gold Irish butter)
1/2 large, not overripe avacado
Lemon juice and seasoning salt to taste

I just mashed it all with a small fork, but next time I'll use my magic bullet to make it look prettier. But looks aren't everything.
